Can you brew beer and store it in quart Mason Jars?
I recently bottled a batch of home brew and found I didn't have enough bottles. I put the last bit in a quart jar and sealed it like you would veggies when you put them up. I just got a new lid and put it on the jar. Did I make a bomb or will the jar hold the pressure?
It probably won't explode, but it might not necessarily seal very well either. Usually mason jars are vacuum sealed (pressure actually holds the lid on tighter), but the CO2 given off by the yeast while bottle conditioning will add pressure to your jar. A bad seal could lead to contamination. Also, clear jars let light in, which can damage the yeast and give your beer a "skunky" taste.
In summary, it probably won't explode, but you might have some flat funky-tasting brew on your hands. I suppose there are worse things in life. Just keep the jars covered or in a dark place.
